Macerating the whole orange in this drink leaves you with a sweet, drinkable syrup made intensely fragrant by the oils found in the peel. It’s the perfect complement to the bitter citrus in the Australian amaro, and fruit and herbs we serve it with. Created to enjoy with friends, this fun but elegant drink is perfect for the entertaining season.








Cut 1 large orange into small pieces, skin and all. Place into a bowl with 50g caster sugar. Stir until the orange is well coated. Set the bowl aside for half an hour to macerate.
Meanwhile, place a large handful of sliced strawberries, a thinly sliced cucumber, a thinly sliced white nectarine and a large handful of torn fresh mint leaves into your largest serving jug or carafe. Pour in 120ml Imbroglio amaro (or any other deliciously bitter red amaro you enjoy) and 60ml gin. Give the jug a gentle swirl.
Stir the orange to ensure all the sugar has dissolved. Add the pieces and all the macerating syrup into your serving jug.
Top your jug with ice and 400ml soda water, or more to your liking. Swirl the jug until everything is well combined.
